- 1 pound beef (flank steak or sirloin), sliced thin
- 2 cups broccoli florets
- 1/2 cup soy sauce
- 1/4 cup beef broth
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons cornstarch
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a slow cooker, combine the sliced beef, soy sauce, beef broth, brown sugar, garlic, and ginger. Stir until the beef is well coated.
- Cover and cook on low for 4-5 hours, or until the beef is tender.
- About 30 minutes before serving, add the broccoli florets.
- In a small bowl, mix cornstarch with a little water to create a slurry. Stir this into the slow cooker and cook for an additional 30 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve over cooked rice.
Notes
For extra flavor, marinate the beef in the soy sauce for a few hours before cooking. You can use frozen broccoli if fresh isn’t available; just add it later in the cooking process. Adjust the brown sugar according to your taste.
