Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • ¼ cup water
  • 1 tablespoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped nuts (like almonds or pecans)

Instructions

  1. In a heavy saucepan, melt the butter over medium heat.
  2. Stir in granulated sugar, brown sugar, and water. Mix well until combined.
  3. Bring the mixture to a boil, stirring constantly.
  4. Continue to cook while stirring until the mixture reaches 285°F (soft crack stage) on a candy thermometer, about 10-15 minutes.
  5. Remove from heat and quickly stir in vanilla extract and salt.
  6. Pour the hot toffee mixture onto a parchment-lined baking sheet and spread evenly.
  7. Sprinkle chocolate chips over the warm toffee and let sit for a minute, then spread the melted chocolate.
  8. Top with chopped nuts if desired and allow to cool completely before breaking into pieces.

Notes

Use a heavy-bottomed saucepan to prevent burning and stir constantly for even heating. Store in an airtight container.
