Description

Creamy, protein-rich cottage cheese egg bites perfect for make-ahead breakfast or snacks.


Ingredients

6 large eggs

1 cup full-fat cottage cheese

½ cup shredded cheddar cheese

¼ cup chopped spinach (optional)

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp salt

Black pepper to taste

Butter or nonstick spray for greasing


Instructions

1. Preheat oven to 325°F and place a tray of hot water on the bottom rack.

2. Grease a muffin tin or silicone mold.

3. Add eggs, cottage cheese, garlic powder, onion powder, salt, and pepper to blender.

4. Blend until smooth and pour mixture evenly into muffin cups.

5. Top with cheese and spinach if using.

6. Bake for 20–25 minutes until just set.

7. Cool for 5 minutes, then release gently from pan.

8. Serve warm or refrigerate for later.

Notes

Store in fridge for up to 5 days or freeze in zip-top bag.

Reheat in microwave for 30–45 seconds.
