Ingredients

12 oz smoked sausage (sliced)

8 oz penne pasta

1 tablespoon olive oil

1/2 onion (diced)

2 cloves garlic (minced)

1 cup heavy cream

1/2 cup grated parmesan

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley (for garnish)


Instructions

1. Cook pasta in salted water until al dente. Reserve 1/2 cup of pasta water, then drain.

2. Heat olive oil in a large skillet. Brown the sliced smoked sausage until crisp around edges.

3. Add onion and garlic to the pan. Sauté until softened, about 3 minutes.

4. Pour in heavy cream and bring to a gentle simmer. Stir in paprika, salt, and pepper.

5. Add drained pasta and reserved pasta water. Mix well and simmer for 2–3 minutes.

6. Turn off heat and stir in parmesan until melted and creamy.

7. Garnish with chopped parsley and serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.

Add spinach or sun-dried tomatoes for extra color and flavor.

Use gluten-free pasta if desired.
