Description

A classic comfort dish with tender beef, hearty vegetables, and rich gravy, perfect for busy weeknights.


Ingredients

  • 1 (3-4 lb) beef chuck roast
  • 1 onion, chopped
  • 34 carrots, sliced
  • 34 potatoes, diced
  • 3 cups beef broth
  • 1 packet ranch dressing mix
  • 1 packet onion soup mix
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium-high heat. Sear the roast on all sides until browned.
  2. Place the chopped onions, carrots, and potatoes in the slow cooker.
  3. Put the seared roast on top of the vegetables.
  4. In a bowl, mix beef broth, ranch dressing mix, and onion soup mix, then pour over the roast.
  5. Season with salt and pepper.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours, until the meat is tender.
  7. Serve the roast with the vegetables and drizzle with the gravy.

Notes

For a thicker gravy, mix a cornstarch slurry and stir it in during the last 30 minutes of cooking. You can also add other vegetables like celery or peas for extra nutrition.
