Ingredients

- 1 (3-4 lb) beef chuck roast
- 1 onion, chopped
- 3–4 carrots, sliced
- 3–4 potatoes, diced
- 3 cups beef broth
- 1 packet ranch dressing mix
- 1 packet onion soup mix
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium-high heat. Sear the roast on all sides until browned.
- Place the chopped onions, carrots, and potatoes in the slow cooker.
- Put the seared roast on top of the vegetables.
- In a bowl, mix beef broth, ranch dressing mix, and onion soup mix, then pour over the roast.
- Season with salt and pepper.
- Cover and cook on low for 7-8 hours or high for 4-5 hours, until the meat is tender.
- Serve the roast with the vegetables and drizzle with the gravy.
Notes
For a thicker gravy, mix a cornstarch slurry and stir it in during the last 30 minutes of cooking. You can also add other vegetables like celery or peas for extra nutrition.
