- 1 cup gingerbread cookie crumbs
- 1 cup cream cheese, softened
- 1 cup white chocolate chips
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- Sprinkles or chopped nuts for coating
Instructions
- In a bowl, combine gingerbread cookie crumbs, cream cheese, vanilla extract, ground ginger, ground cinnamon, and nutmeg until well mixed.
- Chill the mixture in the refrigerator for about 30 minutes until firm.
- Once chilled, shape the mixture into small balls.
- Melt white chocolate chips in a microwave or double boiler until smooth.
- Dip each truffle ball into the melted white chocolate, then roll in sprinkles or chopped nuts.
- Place on a wax paper-lined tray and allow to set.

Notes
For best flavor, use crushed gingerbread cookies. If the mixture is too soft to roll, chill longer.
