This one-pot lasagna soup is rich, cheesy, and packed with comforting Italian flavors—perfect for busy weeknights or cozy weekends.
Ingredients
1 tablespoon olive oil
1 pound Italian sausage
1 medium yellow onion, diced
4 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
2 tablespoons tomato paste
1 (28-ounce) can crushed tomatoes
6 cups chicken broth
10 lasagna noodles, broken into pieces
1/2 cup heavy cream (optional)
Salt and pepper, to taste
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1/4 cup grated Parmesan
Fresh basil or parsley, for garnish
Instructions
1. Heat olive oil in a large pot and brown the sausage.
2. Add onion; cook until soft. Stir in garlic, oregano, and red pepper flakes.
3. Add tomato paste and crushed tomatoes; stir well.
4. Pour in chicken broth and bring to a boil.
5. Add broken lasagna noodles and simmer until tender.
6. Stir in cream if using, then season with salt and pepper.
7. In a small bowl, mix mozzarella, ricotta, and Parmesan.
8. Ladle soup into bowls and top with cheese mixture.
9. Garnish with fresh basil or parsley and serve hot.
Notes
You can substitute the sausage with ground turkey or beef. For a dairy-free version, skip the cheese mixture or use vegan alternatives.
