Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 1/2 cup eggnog
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/2 teaspoon ground nutmeg (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the buttermilk and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely.
  10. For the buttercream, beat the butter until creamy, then gradually add the powdered sugar and eggnog until smooth.
  11. Frost the cooled cake with the eggnog buttercream.
  12. Garnish with a sprinkle of ground nutmeg before serving.

Notes

Make sure to properly measure the flour for best results. Allow the cake to cool completely before frosting. Let the cake sit for a day before serving for enhanced flavor.
