  • 1 pound boneless, skinless chicken thighs
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 tablespoon cajun seasoning
  • Salt and pepper to taste
  • 1 cup sliced green onions
  • 1 cup cooked andouille sausage (optional)

Instructions

  1. In the slow cooker, combine the chicken, onion, bell pepper, celery, garlic, diced tomatoes, rice, chicken broth, cajun seasoning, salt, and pepper.
  2. Stir everything to mix well.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  4. If using, stir in the cooked andouille sausage during the last hour of cooking.
  5. Before serving, mix in the sliced green onions for freshness.
