- 4 chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup fresh basil leaves
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in the slow cooker.
- Season chicken breasts with salt and pepper and place them in the slow cooker.
- Add diced tomatoes, garlic, and heavy cream on top of the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- When done, stir in fresh basil before serving.
Notes
Serve over rice or pasta. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
