Ingredients
2 pounds boneless, skinless chicken thighs or breasts
3 tablespoons canned chipotle peppers in adobo sauce
2 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon fresh lime juice
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon honey (optional)
Instructions
1. Blend all marinade ingredients into a thick sauce.
2. Pour marinade over chicken and let sit for at least 1 hour.
3. Preheat grill or skillet to medium-high heat.
4. Cook chicken for 5–7 minutes per side until charred and done.
5. Let rest 5 minutes before slicing and serving.
Notes
You can adjust the spice by reducing the chipotle peppers or blending them with Greek yogurt for a milder version.
