Ingredients

  • 4 chicken breasts
  • 1 cup pineapple juice
  • 1 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 can pineapple chunks (optional)
  • Green onions for garnish (optional)

Instructions

  1. In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, garlic powder, and ground ginger.
  2. Place chicken breasts in the crock pot and pour the sauce over them.
  3. If using, add pineapple chunks on top of the chicken.
  4. Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the chicken is cooked through and tender.
  5. Serve with rice and garnish with green onions if desired.

Notes

For extra tenderness, marinate the chicken in the sauce for a few hours before cooking. Adjust the sweetness to your taste and add red pepper flakes for some heat if desired.
