- 4 chicken breasts
- 1 cup pineapple juice
- 1 cup brown sugar
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 can pineapple chunks (optional)
- Green onions for garnish (optional)
Instructions
- In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, garlic powder, and ground ginger.
- Place chicken breasts in the crock pot and pour the sauce over them.
- If using, add pineapple chunks on top of the chicken.
- Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the chicken is cooked through and tender.
- Serve with rice and garnish with green onions if desired.
Notes
For extra tenderness, marinate the chicken in the sauce for a few hours before cooking. Adjust the sweetness to your taste and add red pepper flakes for some heat if desired.
